A whole roast was made of the world's best filet mignon steak? That's what Today Gourmet's Chateaubriand, the roast-sized filet mignon, delivers. The secret of the chateaubriand’s tenderness is due to its location on the animal. The tenderloin is a non-weight-bearing muscle that gets minimal exercise. Inactivity keeps the muscle from growing too tough through repetitive movement. It is aged at least 28 days to maximize that tenderness for an even better eating experience naturally. Although incredibly tender, a chateaubriand contains less marbling – the small streaks of intramuscular fat – compared to a prime rib roast. But cook your chateaubriand right, and it’s incredibly tender – you can cut the pieces of meat with a dull butter knife. This roast-size filet mignon is designed to impress with its mild, delicate beef flavor and incredible tenderness. Here’s everything you need to know about this one-of-a-kind cut of beef. PREPARATION INSTRUCTIONS Thaw the roast thoroughly; it will take two days to cool in the refrigerator. Oven: Preheat oven to 425°F. Season thawed chateaubriand roast with cracked pepper and salt. Place roast on a broiling pan or in a roasting pan; roast uncovered in the oven for 50-55 minutes or until the internal temperature reaches 130 degrees for medium rare. Remove from oven. Let beef tenderloin roast rest for 15 minutes for the internal temperature to rise. Serves 8-12 Grilling: Preheat the grill. Season thawed chateaubriand roast with cracked pepper and salt. Place roast on grill and sear on high for 6 minutes; turn roast every 4 to 6 minutes until all sides are seared. Reduce grill heat to medium, continue grilling another 20-30 minutes until desired degree of doneness is reached. Total cooking time will be 40-50 minutes. Putting the roast on a broiler pan will allow the juices to fall into the drip pan and thus will eliminate most splattering and smoking.
